The Gratitude Diaries 002

I actually really enjoyed writing up my Gratitude Diaries post last week. It's often easy to forget the little things in life, and being in lockdown has really stripped things back. The highlights of my week are no longer huge shopping hauls or fancy meals with friends, they now include FaceTiming friends and baking. It's funny how times change, huh?

A list of the things I'm grateful for this week including my biscoff cheesecake recipe and facetiming good friends.



Five things I'm grateful for this week: 

Lighter evenings

The clocks went back and I can confirm it is now light in the evenings, can I hear a hooray? I was out walking Murph at 8pm the other evening and it wasn't pitch black. Summer is on it's way! As much as I love Christmas, I really am a summer gal through and through. 


Time to watch Netflix 

I've mentioned this a few times now, but I'm not usually a massive film or TV watcher. But, I am happy to announce that I am finally making my way through my Netflix Watch List and can confirm I've already crossed one show off and have started another! I would just like to take this moment to say that if you haven't already watched The Stranger, do so immediately! I watched the entire season in a day and was hooked, it's SO good!


Biscoff Cheesecake 

Last week saw me spend a fair while whipping up a new recipe and I am so so pleased with how it turned out. My Biscoff Cheesecake Recipe is hands down the tastiest thing I've ever made and I recommend you all give it a go ASAP, it's truly delicious. It's got a buttery but crunchy base, a light and moussey filling, and a shiny Biscoff topping. If we weren't social distancing and Paul Hollywood gave it a taste, I'm sure he would shake my hand to be honest. 


FaceTiming good friends

I've been catching up with lots of friends over the last week or so, and it's been lovely. Whilst no one has been up to much or has anything massive to report, it's been really nice just to see my pals and check in on them. 


Hanging out with my sis

My sister works nights at a mental health unit so tends to be awake when I'm asleep and vice versa. She has, however, had a couple of days of recently so it's been really nice to spend some time with her! As we've gotten older we've become a lot closer and she genuinely is one of my favourite people to hang out with. I also really like to spend my time deliberately annoying her, so there's that too.
